Description
This roasted cauliflower recipe features tender, caramelized cauliflower florets seasoned with garlic, smoked paprika, and red pepper flakes, then topped with melted Parmesan cheese for a flavorful and satisfying side dish.
Ingredients
Cauliflower and Seasoning
- 1 large head cauliflower (about 2 pounds), cut into small florets (about 8 cups)
- ¼ cup extra-virgin olive oil
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ¼ teaspoon crushed red pepper flakes
Topping
- ⅔ cup freshly grated Parmesan cheese
Instructions
- Preheat the oven: Set the oven to 425°F and position a rack in the center to ensure even roasting.
- Season the cauliflower: On a large rimmed sheet pan, toss the cauliflower florets with the olive oil until evenly coated. Arrange them in a single layer, making sure the pieces do not overlap. Sprinkle the kosher salt, garlic powder, smoked paprika, and crushed red pepper flakes evenly over the florets.
- Roast the cauliflower – first phase: Place the pan in the preheated oven and roast for 20 minutes to allow the cauliflower to start browning and caramelizing.
- Flip the cauliflower: Remove the pan from the oven and carefully turn the florets using a spatula to promote even cooking on all sides.
- Roast the cauliflower – second phase: Return the pan to the oven and roast for another 10 minutes until the edges are nicely browned and the cauliflower is tender when pierced with a fork.
- Sprinkle with Parmesan: Take the pan out again, evenly sprinkle the freshly grated Parmesan cheese over the cauliflower, then place it back into the oven.
- Melt and brown the cheese: Roast for about 5 more minutes until the Parmesan melts and turns golden and slightly crispy.
- Serve warm: Transfer the roasted cauliflower to a serving platter and serve immediately to enjoy the rich flavors and crispy textures.
Notes
- Cutting the cauliflower into uniform florets ensures even cooking and caramelization.
- If you prefer a milder flavor, reduce or omit the crushed red pepper flakes.
- Use freshly grated Parmesan cheese for the best melting and flavor; pre-grated cheese often contains anti-caking agents.
- To make this recipe vegan, substitute the Parmesan with a vegan cheese alternative or nutritional yeast.
- Leftovers can be refrigerated in an airtight container and reheated in the oven to regain crispiness.
