Carrots

  • 2 lbs. carrots
  • 1 Tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper

Honey Balsamic Glaze

  • 2 Tbsp honey
  • 1/4 cup balsamic vinegar
  • 1 Tbsp butter


Instructions

  1. Preheat and Prepare Carrots: Preheat your oven to 400ºF. Wash and/or peel the carrots thoroughly, then cut them into one-inch pieces to ensure even roasting.
  2. Roast the Carrots: Place the cut carrots on a parchment-lined baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper over them, and toss to coat evenly. Roast in the oven for 30 minutes, stirring once halfway through for uniform cooking.
  3. Make the Honey Balsamic Glaze: While the carrots roast, combine honey and balsamic vinegar in a small saucepan. Stir and simmer over medium-low heat for about 10 minutes until the mixture reduces and thickens slightly. Remove from heat and stir in 1 tablespoon of butter until fully melted and incorporated. Set aside the glaze.
  4. Glaze and Serve: Once the carrots are tender and roasted, remove them from the oven and drizzle the honey balsamic glaze over the top. Toss well to coat all pieces evenly and serve warm for the best flavor.
