Description

This Roasted Broccolini recipe offers a quick and flavorful way to enjoy tender and slightly charred baby broccoli. Tossed with garlic, olive oil, Parmesan, and a hint of red pepper flakes, then roasted to crisp-tender perfection, this dish makes a perfect side for any meal.

Ingredients

Broccolini

  • 2 medium bunches broccolini (baby broccoli), just shy of 1 pound

Seasoning & Toppings

  • 2 1/2 tablespoons extra virgin olive oil (plus additional as needed)
  • 3 cloves garlic, smashed and peeled
  • 1/2 teaspoon kosher salt (plus additional for serving)
  • 1/4 teaspoon ground black pepper
  • Pinch red pepper flakes (optional)
  • 3 tablespoons grated Parmesan cheese
  • Freshly squeezed lemon juice, to taste

Instructions

  1. Preheat and Prepare: Place a rack in the center of your oven and preheat it to 425°F (220°C). Prepare a large rimmed baking sheet by coating it with nonstick spray or lining with parchment paper for easy cleanup.
  2. Trim Broccolini: Trim off the ends of the broccolini stems. If the stalks are thick, slice them lengthwise so that all broccolini pieces are similar in diameter. Arrange the broccolini in the center of the baking sheet.
  3. Add Garlic and Seasonings: Scatter the smashed garlic cloves over the broccolini. Drizzle the olive oil evenly, then sprinkle with kosher salt, black pepper, and red pepper flakes if using.
  4. Coat and Arrange: Toss thoroughly to coat every piece of broccolini and the florets with oil and distribute the garlic evenly. Ensure all floret tips are well coated to prevent burning. Arrange broccolini in a single layer and turn any cut sides down to touch the pan. If desired, sprinkle the grated Parmesan over the top.
  5. Roast: Place the baking sheet in the preheated oven and roast for 10 to 15 minutes until the broccolini is crisp-tender and beginning to char. Halfway through, rotate the pan 180 degrees for even roasting. No need to flip the broccolini.
  6. Finish and Serve: Remove from oven, sprinkle with additional kosher salt, and squeeze fresh lemon juice over the broccolini. Serve immediately and enjoy the flavorful, tender vegetable.

Notes

  • Do not skimp on the olive oil as it protects the broccolini from burning during roasting.
  • Cut thicker stems lengthwise so all pieces cook evenly.
  • Red pepper flakes are optional but add a nice gentle heat.
  • Freshly grated Parmesan adds a nutty flavor, but you can omit for a dairy-free option.
  • Adjust roasting time based on your oven and the thickness of broccolini stems; look for tender stalks and slightly charred tips.
  • Use lemon juice to brighten the dish right before serving.
