Ingredients
Chocolate
- 8 ounces semi-sweet or milk chocolate melting wafers (or bars, broken into small pieces)
Buttercream Base
- 2½ sticks (20 tablespoons) unsalted butter, softened but still cool
- 1¼ cups confectioners’ sugar
- ½ cup unsweetened natural cocoa powder, such as Hershey’s
- ⅛ teaspoon salt
Other Ingredients
- ¾ cup light corn syrup
- 1 teaspoon vanilla extract
Instructions
- Melt the Chocolate: Place the chocolate in a microwave-safe bowl and cook in the microwave in 20-second intervals, stirring in between each until about three-quarters melted. Then stir thoroughly to allow residual heat to melt the remaining pieces completely. If needed, microwave for a few more seconds. Set aside to cool.
- Mix Buttercream Base: In a food processor, combine the softened butter, confectioners’ sugar, cocoa powder, and salt. Process until smooth, approximately 30 seconds, scraping down the sides as needed to incorporate all ingredients evenly.
- Add Corn Syrup and Vanilla: Add the light corn syrup and vanilla extract to the food processor and blend just until combined, about 5 to 10 seconds. Scrape down the bowl sides again to ensure a uniform mixture.
- Incorporate Melted Chocolate: Add the lukewarm melted chocolate to the buttercream mixture and pulse in short bursts for 10 to 15 seconds until the mixture is smooth and creamy. Take care not to overmix to maintain the desired texture.
- Use or Store: The buttercream can be used immediately to frost your cake or held at room temperature for 3 to 4 hours. If the frosting loses its shine during this time, warm a metal spoon under hot water, dry it, and stir the buttercream with the spoon to restore its glossy appearance.
