Description

A flavorful and elegant appetizer featuring tender mushrooms roasted in red wine and aromatic herbs, served atop garlic butter toasts spread with creamy goat cheese. Perfect for entertaining or a sophisticated snack.

Ingredients

Mushrooms and Marinade

  • 12 ounces mini mushrooms (portobellos or white, stems removed if desired)
  • 1/2 cup red wine
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced or pressed)
  • 2 teaspoons fresh thyme leaves
  • 2 teaspoons freshly chopped oregano
  • 1/4 teaspoon pepper
  • 1/4 teaspoon coarse sea salt
  • 2 tablespoons freshly chopped parsley

Bread and Topping

  • 1 loaf of artisan grain bread or 1 baguette (sliced)
  • 4 tablespoons unsalted butter (softened)
  • 1/2 teaspoon garlic salt
  • 12 ounces goat cheese (softened)

Instructions

  1. Preheat the Oven: Set your oven to 425 degrees Fahrenheit to get it ready for roasting the mushrooms and toasting the bread.
  2. Prepare and Roast Mushrooms: In a large baking dish, combine the mushrooms with melted butter, olive oil, garlic, thyme, and oregano. Toss well to coat evenly. Pour in the red wine and mix again to cover all mushrooms. Roast uncovered for 25-30 minutes until the mushrooms are soft and juicy, stirring once or twice during cooking. Remove from oven and season with sea salt and pepper. Stir in chopped parsley for a fresh finish.
  3. Toast the Bread: While the mushrooms roast, arrange sliced bread on a baking sheet. Spread softened butter on each slice and sprinkle with garlic salt. Place on the lower rack of the oven beneath the mushrooms, or wait until mushrooms are finished if preferred. Bake for 10-12 minutes until golden brown, checking once during baking. Once toasted, allow bread to cool slightly.
  4. Assemble the Toasts: Spread a generous layer of softened goat cheese on each warm toast. Top with the roasted mushrooms and their juices. Serve immediately for the best flavor and texture.
  5. Optional Serving Suggestion: The roasted mushrooms can also be enjoyed on their own straight from the dish if desired.

Notes

  • You can use a mix of portobello and white mini mushrooms or stick to one variety based on preference.
  • Removing mushroom stems is optional but can create a cleaner texture.
  • Adjust garlic and herb quantities to suit your taste.
  • For a crispier toast, broil the bread for a minute or two after toasting if desired, but watch closely to prevent burning.
  • Leftover mushrooms can be refrigerated and reheated gently for another meal.
