Description

This Red Wine Bucatini recipe combines the rich flavors of crispy pancetta and a fragrant garlic and red wine reduction, tossed perfectly with al dente bucatini pasta and finished with butter, Parmesan cheese, and fresh herbs. It’s a sophisticated yet simple dish that transforms pantry staples into an elegant meal in just 45 minutes.

Ingredients

Meat

  • 4 ounces diced pancetta

Dairy

  • 1 tablespoon unsalted butter (for sauce base)
  • 4 tablespoons unsalted butter (for finishing sauce)
  • 2 ounces freshly grated Parmesan cheese

Produce & Herbs

  • 6 garlic cloves, minced or pressed
  • chopped fresh parsley and basil, for topping

Pantry

  • ¼ teaspoon crushed red pepper flakes
  • pinch of salt and pepper
  • 1 (750 mL) bottle red wine, such as Cabernet Sauvignon or Pinot Noir
  • 1 pound bucatini pasta

Instructions

  1. Cook Pancetta: Heat a large pot over medium heat and add the diced pancetta. Cook until the pancetta is crispy and its fat has rendered out. Use a slotted spoon to remove the pancetta and transfer it onto paper towels to drain excess grease.
  2. Sauté Garlic and Pepper Flakes: In the same pot, add 1 tablespoon of unsalted butter and maintain the heat at medium. Add minced garlic, crushed red pepper flakes, and a pinch of salt and pepper. Stir frequently and cook until the garlic becomes fragrant and turns slightly golden, about 2 to 3 minutes.
  3. Reduce Red Wine: Pour in the entire bottle of red wine and bring the mixture to a boil. Allow it to simmer uncovered, stirring occasionally, until the wine reduces by half to two-thirds. This should take approximately 20 minutes, concentrating the flavors and thickening the sauce.
  4. Cook Bucatini: While the wine is reducing, bring a separate large pot of salted water to a boil. Add the bucatini pasta and cook until very al dente, about 9 to 10 minutes. Then, drain the pasta.
  5. Combine Pasta with Sauce: Transfer the drained bucatini directly into the pot with the reduced red wine sauce. Add the remaining 4 tablespoons of unsalted butter. Toss the pasta gently in the sauce and cook for another 2 to 3 minutes to allow the noodles to soak up the flavorful sauce and for it to thicken slightly.
  6. Add Pancetta: Stir the crispy pancetta back into the pasta and sauce mixture to combine all ingredients evenly.
  7. Serve: Serve the pasta hot, topped generously with freshly grated Parmesan cheese and chopped fresh parsley and basil for a bright, herby finish.

Notes

  • Using a good quality dry red wine like Cabernet Sauvignon or Pinot Noir enhances the flavor of the sauce.
  • Be careful not to overcook the pasta; it should be very al dente as it will cook further when tossed in the sauce.
  • For a spicier kick, adjust the amount of crushed red pepper flakes according to your preference.
  • This dish pairs wonderfully with a simple green salad and crusty bread.
  • Leftovers can be refrigerated and gently reheated on the stovetop; add a splash of water or wine if the sauce thickens too much.
