Description

Celebrate with a festive Red White and Blue Jello Poke Cake that’s as fun to make as it is to eat! This patriotic dessert features a moist white cake poked with vibrant cherry and blue raspberry Jello, creating colorful pockets of flavor. Topped with fluffy whipped cream and red, white, and blue sprinkles, this cake is perfect for holidays, parties, or any occasion needing a burst of celebratory spirit.

Ingredients

Cake

  • 1 Box White Cake Mix (plus ingredients required to make the cake, typically eggs, oil, and water as per box instructions)

Jello Mixtures

  • 3 Ounces Cherry Jello
  • 3 Ounces Blue Raspberry Jello
  • 1 Cup Boiling Water (divided into two halves of 1/2 cup each)

Toppings

  • 8 Ounces Whipped Topping (Cool Whip)
  • Red, White, and Blue Sprinkles (quantity as desired)

Instructions

  1. Prepare the Cake: Follow the instructions on the white cake mix box to prepare and bake the cake as directed. Once baked, allow it to cool slightly but remain warm enough to poke holes.
  2. Make the Jello Solutions: Dissolve 1.5 ounces of cherry Jello in 1/2 cup boiling water by stirring thoroughly until fully dissolved. In a separate bowl, dissolve 1.5 ounces of blue raspberry Jello in another 1/2 cup boiling water until completely combined.
  3. Poke the Cake: Using the end of a wooden spoon, poke holes evenly all over the warm cake’s surface, creating pockets for the Jello to seep into.
  4. Add the Jello: Pour the cherry Jello mixture carefully into half of the holes, and then pour the blue raspberry Jello mixture into the remaining holes. Take care not to mix the two colors to maintain a vibrant red and blue pattern.
  5. Chill the Cake: Place the cake in the refrigerator for at least 30 minutes, or up to overnight, allowing the Jello to set fully inside the cake.
  6. Add Toppings and Serve: Once chilled, spread the whipped topping evenly over the cake. Decorate the top with red, white, and blue sprinkles to enhance the festive look. Slice and serve chilled.

Notes

  • You can use any brand of white cake mix; just follow the package instructions for best results.
  • The white cake should be warm when poking to ensure the Jello penetrates well.
  • For best visual contrast, avoid over-pouring Jello to prevent colors from blending together.
  • This cake can be prepared a day ahead to allow the flavors to fully meld and the Jello to set properly.
  • Store leftovers covered in the refrigerator for up to 3 days.
