- 1 lb. dry red beans
- 2 Tbsp cooking oil
- 14 oz. Andouille sausage

- 1 tsp dried thyme

- 1/4 cup chopped parsley

- 6 cups water
- 1.5 cups long grain white rice, uncooked
- 3 cups water for rice cooking

Instructions
- Soak Beans: The night before cooking, place the dry red beans in a large bowl and cover them with double their volume in water. Refrigerate and let soak overnight to soften the beans for faster cooking.
- Cook Sausage: When ready, slice the Andouille sausage into rounds. Heat the cooking oil in a large pot over medium heat, add the sausage slices, and cook until browned. Remove the sausage with a slotted spoon and set aside in the refrigerator.
- Prepare Vegetables: Dice the yellow onion, green bell pepper, and celery. Mince the garlic cloves while the sausage cooks, so all ingredients are ready for the next step.
- Sauté Vegetables: Without draining the sausage fat, add the diced onion, bell pepper, celery, and minced garlic to the pot. Cook over medium heat, stirring occasionally, until the onions become soft. The vegetable moisture will help deglaze and lift the browned bits off the bottom.
- Add Spices: Stir in smoked paprika, dried oregano, dried thyme, garlic powder, onion powder, cayenne pepper, black pepper, and bay leaves. Cook together for about one minute to bloom the spices and enhance their flavors.
- Add Beans and Water: Drain and rinse the soaked beans, then add them to the pot along with 6 cups of water. Stir briefly to combine all ingredients.
- Simmer Beans: Cover the pot with a lid, bring the mixture to a boil over medium-high heat, then reduce heat to medium-low. Let the beans simmer for one hour, stirring occasionally and replacing the lid after each stir.
- Thicken Beans: After one hour, check that the beans are tender. Use the back of a spoon to smash some beans against the pot side. Continue smashing and simmer uncovered for an additional 30 minutes to thicken the mixture.
- Cook Rice: While the beans simmer, prepare the rice by combining 1.5 cups uncooked long grain white rice with 3 cups water in a sauce pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer for 15 minutes. Remove from heat and let rest for 5 minutes, covered. Fluff the rice with a fork before serving.
- Finish Beans: Return the cooked sausage to the thickened beans along with 1/4 cup chopped fresh parsley. Stir well to combine. Taste the beans and season with salt starting from 1 teaspoon, adding more up to 1 tablespoon according to your preference.
- Serve: Serve the red beans hot in bowls topped with a scoop of the cooked rice and garnished with sliced green onions for a fresh, vibrant finish.
