Ingredients
Brownie Base
- 2 cups raw unsalted walnuts
- 2 cups packed pitted medjool dates
- 1/3 cup walnuts (optional, for walnut chunks)
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
Chocolate Topping
- 1/4 cup coconut oil
- 1/3 cup cocoa powder
- 1/4 tsp vanilla extract
- 2 tbsp maple syrup
Instructions
- Prepare the Pan: Line an 8×8-inch pan with parchment paper and set aside. Alternatively, use a mini silicone muffin pan for bite-sized brownies.
- Make the Brownie Dough: In a food processor, pulse together 2 cups of walnuts, medjool dates, 1/2 cup cocoa powder, 1 tsp vanilla extract, and a pinch of salt until a sticky dough forms. Scrape down the sides as needed. If using the optional 1/3 cup walnuts for texture, add them now and pulse a few times to incorporate without breaking them down too much.
- Press the Mixture: Firmly press the dough mixture into the prepared pan, smoothing the top with your hands or a spatula. If using the mini muffin pan, press a spoonful into each well and flatten the tops evenly.
- Prepare the Chocolate Topping: Melt the coconut oil and 1/3 cup cocoa powder together in the microwave or over a double boiler until smooth. Stir in 1/4 tsp vanilla extract and 2 tbsp maple syrup until fully blended.
- Apply the Topping: Pour the melted chocolate mixture over the pressed brownie base and spread it evenly across the surface.
- Chill to Set: Place the pan in the refrigerator or freezer for at least 1 hour to allow the brownies to set firmly.
- Serve and Store: Remove brownies from the pan and slice into squares, or pop out of the mini muffin wells. Store in the fridge for up to 1 week or freeze for up to 3 months to maintain freshness.
Notes
- If using the mini muffin pan, these brownies make perfect two-bite servings ideal for parties or snacks.
- The optional 1/3 cup walnuts add a nice crunchy texture if preferred.
- Ensure all ingredients are raw and unsalted to maintain the recipe’s health benefits.
- For best results, allow the brownies to set fully in the freezer for a firmer texture.
- Use high-quality cocoa powder and maple syrup for enhanced flavor.
