Ingredients

Brownie Base

  • 2 cups raw unsalted walnuts

Chocolate Topping

  • 1/4 cup coconut oil
  • 1/3 cup cocoa powder
  • 1/4 tsp vanilla extract
  • 2 tbsp maple syrup


Instructions

  2. Make the Brownie Dough: In a food processor, pulse together 2 cups of walnuts, medjool dates, 1/2 cup cocoa powder, 1 tsp vanilla extract, and a pinch of salt until a sticky dough forms. Scrape down the sides as needed. If using the optional 1/3 cup walnuts for texture, add them now and pulse a few times to incorporate without breaking them down too much.
  3. Press the Mixture: Firmly press the dough mixture into the prepared pan, smoothing the top with your hands or a spatula. If using the mini muffin pan, press a spoonful into each well and flatten the tops evenly.
  4. Prepare the Chocolate Topping: Melt the coconut oil and 1/3 cup cocoa powder together in the microwave or over a double boiler until smooth. Stir in 1/4 tsp vanilla extract and 2 tbsp maple syrup until fully blended.
  5. Apply the Topping: Pour the melted chocolate mixture over the pressed brownie base and spread it evenly across the surface.
  6. Chill to Set: Place the pan in the refrigerator or freezer for at least 1 hour to allow the brownies to set firmly.
