Ingredients
Crumble
- 175 g rolled oats
- 200 g plain flour
- 150 g light brown soft sugar
- 1/2 tsp baking powder
- 175 g unsalted butter (cold and cubed)
Filling
- 400 g fresh raspberries
- 150 g raspberry jam
- 1 tbsp lemon juice
- 1 tbsp cornflour
Instructions
- Preheat and Prepare: Preheat your oven to 200ºC (180ºC fan). Line a 9×9 inch square baking tin with parchment paper to prevent sticking and allow easy removal of the bars later.
- Make the Crumble Mixture: In a large bowl, combine the rolled oats, plain flour, light brown soft sugar, baking powder, and cold, cubed unsalted butter. Using your fingers, rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs with no large lumps of butter remaining.
- Prepare the Filling: In a separate bowl, add the fresh raspberries, raspberry jam, lemon juice, and cornflour. Mash them together gently until well combined, keeping some texture in the raspberries for a fresh bite.
- Assemble the Bars: Pour approximately 500g of the oat crumble mixture into the lined baking tin and press it down firmly to form an even base layer. Spread the raspberry filling evenly over the base. Then, sprinkle the remaining crumble mixture evenly on top of the filling as a crisp topping.
- Bake: Place the tin in the oven and bake for 30 minutes or more until the crumble topping turns golden brown and looks beautifully crisp.
- Cool and Serve: Once baked, allow the bars to cool completely in the tin. For easier cutting and serving, refrigerate them after cooling. Once chilled and firm, cut into 16 portions and enjoy your raspberry crumble bars.
