Description

This Raspberry & Cream Parfait is a delightful and elegant no-bake dessert featuring a creamy, liqueur-infused cream cheese mixture layered with fresh raspberries and garnished with mint. Perfect for a quick yet impressive treat that can be prepared ahead of time.


Ingredients

Cream Mixture

  • 4 oz cream cheese, at room temperature
  • 2 tablespoons orange- or almond-flavored liqueur, such as Grand Marnier or Amaretto (optional)
  • ½ cup sugar
  • ½ cup heavy cream

Fruit and Garnish

  • 3 cups fresh raspberries
  • 4 small sprigs mint, for garnish


Instructions

  1. Prepare Glassware: Have 4 wineglasses or glass dessert cups ready to assemble the parfaits.
  2. Mix Cream Cheese Mixture: In the bowl of a stand mixer fitted with a whisk attachment or using a hand-held electric mixer, combine the cream cheese, liqueur, and sugar. Beat on medium-high speed until creamy and lump-free, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula to ensure smoothness.
  3. Incorporate Heavy Cream: Add the heavy cream to the mixture and begin beating on low speed to prevent splashing. Gradually increase to high speed and continue beating until the mixture thickens to a pudding-like consistency, around 2 minutes.
  4. Assemble the Parfaits: Divide half of the fresh raspberries evenly among the bottoms of the glasses. Layer two-thirds of the cream mixture over the berries, covering them evenly. Add the remaining raspberries on top of the cream layer gently, then spoon the rest of the cream mixture over the top layer of berries.
  5. Chill and Garnish: Refrigerate the parfaits for at least 1 hour and up to 4 hours to allow flavors to meld. Before serving, garnish each parfait with a small sprig of fresh mint for a refreshing finish.
