Ingredients
Chocolate Mixture
- 1 cup dark chocolate
- 1 tbsp coconut oil
- 2 tbsp peanut butter
- 3 tbsp quinoa crisps
Peanut Butter Filling
- 1/3 cup peanut butter
- 1 tbsp maple syrup
- 1 tbsp coconut flour
Instructions
- Melt the Chocolate: In a medium bowl, combine the dark chocolate and coconut oil. Microwave in 30-second increments, stirring well after each until the chocolate is smooth and creamy.
- Mix in Peanut Butter and Quinoa Crisps: Add 2 tablespoons of peanut butter and the quinoa crisps into the melted chocolate mixture. Stir well and set aside.
- Prepare the Peanut Butter Filling: In a small bowl, mix together 1/3 cup peanut butter and maple syrup until combined.
- Thicken the Filling: Gently fold in the coconut flour into the peanut butter mixture until it begins to thicken and hold shape.
- Layer the Chocolate Base: Spoon about 1/2 tablespoon of the chocolate mixture into each silicone cupcake liner, spreading it evenly to form the base.
- Add the Peanut Butter Center: Roll 1 teaspoon of the peanut butter filling into a ball, flatten slightly, and place it in the center of the chocolate base in each liner, ensuring it does not touch the sides.
- Top with Chocolate: Spoon the remaining chocolate mixture over the peanut butter centers to fully cover them.
- Set the Cups: Place the silicone liners filled with peanut butter cups into the freezer until fully firm, about 15-20 minutes.
- Serve: Once solid, remove the peanut butter cups from the liners and enjoy your crunchy, chocolaty treat!
Notes
- Use silicone cupcake liners for easy removal of the cups.
- Adjust the sweetness by varying the amount of maple syrup in the peanut butter filling.
- Store the cups in the freezer or refrigerator to maintain firmness.
- For variation, substitute quinoa crisps with puffed rice or other cereal crisps.
- Allow slightly to warm at room temperature before eating for a softer texture.
