Description

This quick and flavorful Chow Mein recipe features tender chicken, crisp vegetables, and perfectly cooked noodles tossed in a savory homemade sauce. Ready in just 15 minutes, it’s a perfect weeknight stir-fry meal that’s both satisfying and easy to prepare.

Ingredients

Chicken & Vegetables

  • 200g / 6 oz chicken breast or thigh fillets, thinly sliced
  • 4 cups green cabbage, finely shredded
  • 1 carrot, julienned
  • 1 1/2 cups bean sprouts
  • 3 green onions, cut into 5cm / 2″ pieces (separate white and green parts)
  • 2 cloves garlic, finely chopped

Noodles

  • 200g / 6 oz chow mein noodles

Sauce

  • 1 1/2 tbsp soy sauce (all purpose or light)
  • 1 1/2 tbsp oyster sauce (substitute Hoisin sauce if preferred)
  • 1 1/2 tbsp Chinese cooking wine or Mirin
  • 2 tsp sugar (reduce to 1 tsp if using Mirin)
  • 2 tsp cornflour / cornstarch
  • 1/4 cup (65 ml) water
  • 1/2 tsp sesame oil

Cooking Oil

  • 1 1/2 tbsp peanut oil or other cooking oil

Instructions

  1. Prepare Sauce: In a small bowl, mix cornflour and soy sauce until smooth, then stir in oyster sauce, Chinese cooking wine (or Mirin), sugar, water, and sesame oil until fully combined. Set aside.
  2. Marinate Chicken: Pour 1 tablespoon of the prepared sauce over the thinly sliced chicken, mix well to coat, and let it marinate for 10 minutes to tenderize and infuse flavor.
  3. Prepare Noodles: Soak the chow mein noodles in boiling water for about 1 minute or according to package instructions. Once softened, drain and set aside.
  4. Heat Oil: Heat 1 1/2 tablespoons peanut oil in a wok or large frying pan over high heat until shimmering.
  5. Stir Fry Garlic: Add the finely chopped garlic to the hot oil and stir fry quickly for about 10 seconds until it starts to turn golden. Be careful not to burn it to avoid bitterness.
  6. Cook Chicken: Add the marinated chicken to the wok and stir fry for about 1 minute until the outside begins to brown but the interior remains slightly pink.
  7. Add Vegetables: Toss in the shredded cabbage, julienned carrot, and the white parts of the green onions. Stir fry for 1 1/2 minutes until the cabbage begins to wilt but still retains some crunch.
  8. Add Noodles and Sauce: Add the drained noodles, the remaining sauce mixture, and 1/4 cup water to the wok. Stir fry vigorously for 1 minute, tossing constantly to evenly coat ingredients and heat through.
  9. Finish with Bean Sprouts and Green Onion Tops: Add the bean sprouts and the green parts of the scallions. Toss everything together for about 30 seconds or until the bean sprouts just start to wilt.
  10. Serve: Remove from heat immediately to prevent overcooking and serve the Chow Mein hot for best texture and flavor.

Notes

  • For tender chicken, you can gently pound the slices before marinating.
  • If you have Chinese All Purpose Stir Fry Sauce, you may substitute it for the homemade sauce mentioned.
  • Use light soy sauce for a less salty taste or all-purpose soy sauce for more depth.
  • Chinese cooking wine helps enhance the authentic flavor, but Mirin works as a sweet substitute with a slight reduction in sugar.
  • Keep the cooking time short and at high heat to maintain crisp vegetables and prevent soggy noodles.
