Description

This quick and easy pizza recipe uses buttery biscuit dough as a unique crust base, topped with flavorful ground beef, pepperoni, and melted mozzarella cheese. Ready in just 30 minutes, this homemade pizza is perfect for a satisfying weeknight meal with a delightful combination of textures and savory toppings.

Ingredients

Beef Topping

  • 2 tbsp oil
  • 1 lb ground beef
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • ¼ tsp garlic powder
  • ¼ tsp red chili flakes
  • ⅛ tsp black pepper

Biscuit Dough Crust

  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 6 tbsp cold butter
  • 1 1/2 cups buttermilk (or 2 tbsp lemon juice mixed with 1 ⅓ cups milk)

Pizza Toppings

  • 1 ½ cups prepared pizza sauce
  • 3 cups shredded mozzarella cheese
  • 1 cup pepperoni slices (4 oz)
  • Torn basil leaves (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 425ºF and line a 9×13” baking sheet or a deeper baking pan with parchment paper to prevent sticking.
  2. Cook Beef Topping: Heat oil in a large skillet over medium-high heat. Add the ground beef along with kosher salt, onion powder, garlic powder, red chili flakes, and black pepper. Stir occasionally and cook until the beef is browned and fully cooked, about 5 minutes.
  3. Mix Dry Ingredients for Crust: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and kosher salt to evenly distribute the leavening agents and salt.
  4. Add Butter: Grate the cold butter into the flour mixture and whisk again to incorporate the butter bits thoroughly throughout the dry ingredients.
  5. Form Biscuit Dough: Pour in the buttermilk (or milk and lemon juice mixture). Using a wooden spoon or silicone spatula, fold the ingredients gently together until a shaggy dough forms; the dough doesn’t need to be perfectly uniform.
  6. Shape Crust: Spoon the biscuit dough onto the prepared baking sheet. With dampened hands, press the dough evenly into the pan to form the pizza crust base.
  7. Par-Bake Crust: Bake the crust in the preheated oven for 10 minutes to set it before adding toppings.
  8. Assemble Pizza: Remove the par-baked crust from the oven. Spread the pizza sauce evenly over the crust, then sprinkle a layer of shredded mozzarella cheese, add the cooked beef topping, arrange pepperoni slices on top, and optionally add more cheese.
  9. Bake Pizza: Return the topped pizza to the oven and bake for an additional 10 minutes or until the cheese is golden, bubbly, and the crust is cooked through.
  10. Garnish: Once baked, top the pizza with torn fresh basil leaves for a burst of freshness and serve hot.

Notes

  • Using cold butter grated into the dry ingredients helps create a flaky, biscuit-like crust texture.
  • If you don’t have buttermilk, substitute with milk mixed with lemon juice to activate the baking soda and powder.
  • Pressing the dough evenly ensures a uniform thickness and even baking throughout the crust.
  • Par-baking the crust prevents sogginess when adding wet toppings like sauce and cheese.
  • You can customize the toppings by adding vegetables or other meats as preferred.
  • Use parchment paper for easy cleanup and to prevent sticking.
