Ingredients
Spinach Mixture
- 2 (10 ounce) packages frozen chopped spinach, thawed and drained
- 1 (8 ounce) package cream cheese, softened
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 3 ounces French-fried onions (half of a 6 ounce can)
Topping
- 3 ounces French-fried onions (remaining half of the 6 ounce can)
Instructions
- Preheat the oven: Set your oven to 350 degrees F (175 degrees C) to prepare for baking the casserole.
- Mix spinach mixture: In a large bowl, combine the thawed and drained chopped spinach with softened cream cheese, condensed cream of mushroom soup, and half of the French-fried onions. Stir the ingredients thoroughly until well combined to create a creamy mixture.
- Assemble in casserole dish: Transfer the spinach mixture into a 2-quart casserole dish, spreading it evenly. Then, sprinkle the remaining French-fried onions evenly over the top to add a crunchy topping.
- Bake: Place the casserole in the preheated oven and bake for 20 minutes, or until the casserole is heated through and the onion topping is golden and crisp.
Notes
- Be sure to thoroughly drain the thawed spinach to avoid excess moisture in the casserole.
- For a richer flavor, allow the cream cheese to soften completely at room temperature before mixing.
- You can substitute cream of mushroom soup with cream of chicken or celery soup for a different flavor profile.
- This casserole pairs well with roasted meats or can be served as a vegetarian main dish.
