Ingredients
Sausage and Vegetables
- 1 lb smoked sausage, sliced into 1-inch discs (andouille sausage or Conecuh sausage)
- 2 tbsp olive oil
- 10-oz bag frozen seasoning blend (pre-chopped onion, bell pepper, and celery) (see Notes for substitution)
Beans and Seasoning
- 15.5-oz can red beans (undrained) (or pinto beans as alternative)
- 16-oz can Blue Runner Creole Cream Style Red Beans (see Notes for substitution)
- 1 tbsp dried parsley
- 1 tsp minced garlic
- 1 tsp dried basil
- 1/4 tsp Cajun or Creole seasoning (such as Tony’s) (add more seasoning to suit your taste)
For Serving
- Cooked rice
Instructions
- Saute Sausage: Heat olive oil in a skillet over medium heat. Add the sliced smoked sausage and cook until the edges are slightly browned, about 5 minutes, stirring occasionally to ensure even browning.
- Add Vegetables: Stir in the frozen seasoning blend of onion, bell pepper, and celery. Continue to sauté until the vegetables are tender, about 5 more minutes. If using fresh vegetables instead of frozen, sauté an additional 5 minutes and add 1-2 tablespoons of olive oil as needed.
- Add Beans and Seasonings: Pour in the undrained red beans and Creole cream style red beans to the sausage-vegetable mixture. Add dried parsley, minced garlic, dried basil, and Cajun or Creole seasoning. Stir everything together thoroughly.
- Simmer: Reduce heat to low, cover the skillet, and gently simmer the mixture for 5 minutes to allow the flavors to meld and heat through.
- Serve: Remove from heat and serve the red beans and sausage mixture over hot cooked rice for a complete meal.
Notes
- If frozen seasoning blend is unavailable, use fresh diced onions, bell peppers, and celery in equal amounts.
- For a spicier dish, increase Cajun or Creole seasoning to taste.
- Leftover red beans and rice dishes can be refrigerated for up to 3 days in an airtight container.
- This recipe pairs well with a simple green salad or cornbread for a full Southern-style meal.
