- Cook the Chorizo: Place an oven-safe skillet over medium heat and add the tablespoon of cooking oil. Add the chorizo and cook for 7 to 8 minutes, stirring occasionally, until the fat renders out and the sausage becomes bubbly and cooked through.
- Drain Excess Fat and Add Cheese: Drain the excess fat from the skillet, reserving about 3 tablespoons of the cooked chorizo for garnish. For a less greasy dish, you may place the chorizo on paper towels to absorb extra fat before returning it to the skillet. Spread the grated cheese evenly over the cooked chorizo in the skillet.
- Melt the Cheese in the Oven: Transfer the skillet to the preheated oven and bake for 5 to 7 minutes until the cheese melts completely and becomes bubbly and slightly golden on the edges.
- Garnish and Serve: Remove the skillet from the oven, place it on a heat-proof surface, garnish the melted cheese with the reserved chorizo, and serve immediately while hot. Enjoy with warm tortillas or tortilla chips for dipping.
