Instructions
- Preheat and mix dry ingredients: Set oven to 350ºF (175ºC). In a large bowl, whisk together all the dry ingredients — flour, baking powder, salt, pumpkin spice, cinnamon, nutmeg (if using), oats, and sugar — until evenly combined.
- Add wet ingredients: Create a well in the center of the dry mix and add the wet ingredients: melted coconut oil, vanilla extract, pumpkin purée, and egg. Use a spoon to mix everything until just combined, forming a cookie dough.
- Shape and bake cookies: Form the dough into 1-inch balls and place them on a parchment-lined baking sheet or directly on the baking sheet. Bake in the preheated oven for 12-14 minutes until set and lightly golden.
- Cool the cookies: Allow cookies to cool slightly on the baking sheet to help them firm up and hold together. Avoid touching them too much to prevent breaking.
- Prepare the optional icing: In a small bowl, whisk together powdered sugar and almond milk or water until smooth. Adjust the thickness by adding a little more liquid if too thick or more powdered sugar if too thin.
