Instructions

  2. Add wet ingredients: Create a well in the center of the dry mix and add the wet ingredients: melted coconut oil, vanilla extract, pumpkin purée, and egg. Use a spoon to mix everything until just combined, forming a cookie dough.
  3. Shape and bake cookies: Form the dough into 1-inch balls and place them on a parchment-lined baking sheet or directly on the baking sheet. Bake in the preheated oven for 12-14 minutes until set and lightly golden.
  4. Cool the cookies: Allow cookies to cool slightly on the baking sheet to help them firm up and hold together. Avoid touching them too much to prevent breaking.
  5. Prepare the optional icing: In a small bowl, whisk together powdered sugar and almond milk or water until smooth. Adjust the thickness by adding a little more liquid if too thick or more powdered sugar if too thin.
