  • 1 1/3 cups (266g) packed light-brown sugar
  • 2/3 cup (133g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups (290g) canned pumpkin puree

Add-ins

  • 1 3/4 cup (290g) semi-sweet chocolate chips
  • 1 cup (130g) chopped pecans or walnuts (optional)


Instructions

  1. Preheat and Mix Dry Ingredients: Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the all-purpose flour, quick oats, baking soda, salt, cinnamon, nutmeg, and ginger for about 30 seconds. Set this mixture aside for later.
  2. Be sure to occasionally stop and scrape down the sides and bottom of the bowl to ensure even mixing.
