Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Prepare a 12-cup muffin tray by lining it with muffin liners or spraying with baking spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, pumpkin pie spice, ground cinnamon, baking soda, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In a large bowl, blend the pumpkin puree with both the sugar and light brown sugar until the mixture is smooth and uniform. Then stir in the eggs, canola oil, milk, and vanilla extract until fully incorporated.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, gently whisking or folding until the batter is smooth and free of any dry flour streaks. Avoid overmixing to keep muffins tender.
  5. Portion Batter: Spoon the batter evenly into the prepared muffin liners, filling each one to the top for nicely domed muffins.
