Fritter Mixture
- 2 cups grated squash (butternut squash recommended)

- Prepare the squash: Grate the raw pumpkin or butternut squash and then pat it dry using a clean towel or paper towels to remove excess moisture, which helps the fritters hold together better and fry crispier.
- Mix the batter: In a medium mixing bowl, combine the grated and dried squash with the chopped onion, large egg, grated parmesan cheese, all-purpose flour, salt, pepper flakes or black pepper, and parsley. Mix everything thoroughly until fully incorporated. The mixture should be moist but able to hold shape.
- Form fritters: Shape the mixture into 6 equal-sized patties or drop spoonfuls onto a plate and gently flatten each one with the back of a spoon to form discs of about 2-3 inches diameter.
- Heat the oil: Warm 1-2 tablespoons of olive oil in a medium frying pan over medium heat. Make sure the oil is hot but not smoking before adding the fritters.
- Fry the fritters: Carefully place 3 fritters at a time in the frying pan, giving them enough space to avoid sticking. Cook for about 3-4 minutes on each side, or until they turn golden brown and crispy. Adjust heat as needed to prevent burning.
