Ingredients

Peanut Butter Layer

  • ½ cup natural peanut butter (smooth or crunchy)
  • 2 tablespoons maple syrup (or honey)
  • 1 scoop vanilla or peanut butter flavored protein powder
  • Pinch of salt
  • Optional: 1 teaspoon almond milk or water (if mixture feels too dry)

Chocolate Layer

  • ½ cup dark chocolate chips (dairy-free if needed)
  • 1 tablespoon coconut oil


Instructions

  1. Prepare the Peanut Butter Filling: In a mixing bowl, combine the natural peanut butter, maple syrup, protein powder, and a pinch of salt. Stir until the mixture is thick but pliable. If it feels too dry, slowly add a teaspoon of almond milk or water until desired consistency is achieved.
  2. Shape the Centers: Scoop about a tablespoon of the peanut butter mixture and roll into a small disc shape. Repeat with the remaining mixture. Place the discs on a parchment-lined plate and set aside.
  3. Melt the Chocolate: In a heat-safe bowl, melt the dark chocolate chips along with coconut oil in the microwave using 20-second intervals. Stir well between intervals until smooth and glossy.
  4. Assemble the Cups: Spoon a small amount of melted chocolate into the bottom of each muffin liner or silicone mold, just enough to cover the base.
  5. Add the Peanut Butter Discs: Gently place each peanut butter disc on top of the chocolate base, pressing down slightly to secure.
  6. Top It Off: Cover each peanut butter layer with the remaining melted chocolate until fully coated. Tap the tray gently to smooth the tops and release any air bubbles.
  7. Chill and Set: Place the tray in the freezer for 15–20 minutes or until the chocolate is firmly set. Transfer the finished protein cups to the fridge for storage.
