Description

These homemade protein bars are a delicious and nutritious snack made without the need for protein powder. Using black beans as the base, combined with cocoa powder, peanut butter, and oats, these bars offer a rich chocolate flavor with a satisfying texture. They are easy to prepare using a food processor and require no baking, making them perfect for a quick, healthy treat packed with protein and fiber.

Ingredients

Main Ingredients

  • 1 can Black Beans (15-oz can / 425g), drained and rinsed
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/4 cup Peanut Butter
  • 1/3 cup Maple Syrup
  • 1 cup Old-Fashioned Rolled Oats
  • 1/4 cup Chocolate Chips
  • 1/2 teaspoon Coconut Oil

Instructions

  1. Prepare the batter: In a food processor, combine the drained and rinsed black beans, cocoa powder, peanut butter, maple syrup, and rolled oats. Process on medium to high speed until it forms a smooth chocolate paste. You may need to stop the processor 2-3 times to scrape down the sides and ensure even blending. Small pieces of oats are normal and add texture.
  2. Adjust consistency: Check the batter’s consistency by squeezing it into a ball. If it feels too wet, add more oats a little at a time and process again until it holds together well.
  3. Shape the bars: Line a flat surface or a pan with lightly oiled parchment paper. Press the batter firmly onto the parchment, then cover with another piece of parchment. Press down to flatten and shape the mixture into a rectangular slab.
  4. Melt the chocolate topping: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring between each, until the mixture is fully melted and smooth.
  5. Top the bars: Pour the melted chocolate over the prepared bar slab, leaving the edges free of chocolate to make cutting easier later on.
  6. Set the chocolate: Place the bar in the freezer for about 12 minutes to allow the chocolate topping to harden and set properly.
  7. Cut and serve: Remove the bar from the freezer and place it on a chopping board. Cut into 6 even bars using a sharp knife. Serve immediately or store for later snacking.

Notes

  • Ensure black beans are well rinsed and drained to avoid excess moisture in the batter.
  • Peanut butter should be smooth for easier blending; natural or creamy options work best.
  • Maple syrup provides natural sweetness—honey or agave can be substituted if preferred.
  • Old-fashioned rolled oats contribute to binding and texture; quick oats may make the batter too soft.
  • Use dairy-free chocolate chips if you require a vegan or dairy-free option.
  • The coconut oil helps the chocolate topping melt smoothly and harden well when chilled.
  • Store the bars in an airtight container in the fridge or freezer for extended freshness.
