- 2 tablespoons olive oil, divided
- 8 ounces shiitake mushrooms, thinly sliced

Broth and Soup
- 6 cups vegetable broth
- 2 tablespoons soy sauce
- 16 to 20 ounces frozen potstickers
- 5 scallions, thinly sliced and divided
- 3 baby bok choy, ends trimmed off and leaves separated
- 2 teaspoons toasted sesame oil
- Freshly-ground black pepper, to taste

Instructions
- Heat oil and sauté mushrooms: In a large stockpot over medium-high heat, warm 1 tablespoon of olive oil. Add the thinly sliced shiitake mushrooms and sauté them, stirring occasionally, until they develop a nice brown color.
- Add aromatics: Pour in the remaining 1 tablespoon of olive oil, then add the minced garlic and grated fresh ginger. Continue sautéing for 1-2 minutes until the mixture is fragrant and well combined.
- Combine broth and bring to boil: Pour in the vegetable broth and soy sauce, stirring well to combine all ingredients. Increase heat and bring the broth to a rolling boil.
- Add potstickers and vegetables: Gently add the frozen potstickers, half of the sliced scallions, and the separated bok choy leaves to the boiling broth. Stir carefully to integrate all components.
- Cook potstickers and season soup: Let the soup cook for 3-4 minutes or until the potstickers are fully heated and tender. Stir in the toasted sesame oil and freshly ground black pepper to taste. Adjust seasoning by adding more soy sauce or black pepper if desired.
- Serve and garnish: Immediately ladle the soup into bowls and generously garnish with the remaining scallions. Add optional toppings such as chili crisp, toasted sesame seeds, furikake seasoning, or fried garlic as preferred.
