- 1 teaspoon grated ginger
- 4 cups chicken bone broth
- 1 teaspoon low sodium soy sauce or tamari
- 20 frozen chicken potstickers (or gluten-free potstickers such as Feel Good Foods)
- 2 cups baby spinach, stems removed
- Chili crisp, for serving (optional)
Instructions
- Prepare the Aromatics and Vegetables: Heat a medium dutch oven or soup pot over medium-high heat and add the toasted sesame oil. Add the sliced mushrooms, diced scallion whites and light green parts, diced carrot, and ¼ teaspoon kosher salt. Stir to combine and cook until the vegetables soften, about 8 minutes. Then add the grated garlic and ginger, stirring to mix well. Cook for about 1 minute until fragrant.
- Add the Broth and Simmer: Pour in the chicken bone broth and add the low sodium soy sauce or tamari. Stir to combine and bring the mixture to a boil. Reduce heat to low and let it simmer for 5 minutes, allowing the carrots to become tender.
- Cook the Potstickers and Add Spinach: Increase heat to medium-high and add the frozen potstickers to the pot. Cook them until they are fully cooked through, about 6 to 8 minutes. Add the baby spinach at the last minute, stirring it into the hot broth until just wilted.
- Serve and Garnish: Ladle the soup into bowls and garnish with the reserved scallion greens. If desired, top with a spoonful of chili crisp for a spicy kick. Serve hot and enjoy your comforting potsticker soup.
