Description

Polpette di Melanzane are delicious Italian-style eggplant meatballs made without any meat. These tender, flavorful balls combine roasted eggplant, Pecorino Romano cheese, fresh basil, and seasoned breadcrumbs, then pan-fried to golden perfection. Perfect served with tomato sauce and pasta or as a tasty appetizer.

Ingredients

Eggplant Meatballs

  • 4 pounds eggplant (about 3 large eggplants)
  • 1½ cups plain breadcrumbs
  • 1 cup grated Pecorino Romano cheese
  • ½ cup chopped fresh basil (lightly packed)
  • 4 large eggs, beaten
  • 1 Tbsp minced garlic
  • 1½ tsp salt
  • 1 tsp black pepper
  • ½ tsp crushed red pepper
  • Olive oil or other oil as needed for frying

Optional

  • Tomato sauce, either homemade or store-bought

Instructions

  1. Prep Ingredients: Gather all ingredients according to the list. Arrange a rack in the middle of the oven and preheat it to 350°F.
  2. Roast Eggplants: Using a sharp knife, make 4 to 5 slits in each eggplant. Place the eggplants on a wire rack set on a baking sheet or directly on a parchment-lined sheet pan. Bake on the middle rack until eggplants are very tender and the skin is wrinkly, about 45 to 100 minutes. Flip them halfway through. Test doneness by inserting a knife; it should meet no resistance.
  3. Cool and Scoop: Remove eggplants from the oven and let cool just until handleable. Cut off stems, slice in half, and scoop out the soft pulp with a large spoon. Discard skins.
  4. Drain Excess Liquid: Place eggplant pulp in a colander or strainer to release liquid. Press down gently with a fork or spoon. You should get about 1¾ pounds of pulp. This step can be done a day or two in advance, storing pulp refrigerated in airtight container.
  5. Mix Ingredients: Transfer drained eggplant pulp to a mixing bowl. Add the breadcrumbs, grated Pecorino Romano, chopped basil, beaten eggs, minced garlic, salt, black pepper, and crushed red pepper. Mix well with a spoon or hands, breaking up larger pieces. Let the mixture rest for about 10 minutes to blend flavors.
  6. Test and Adjust: Pan-fry a small amount of the mixture to test seasoning and texture. Adjust salt, pepper, or add more breadcrumbs one tablespoon at a time if too wet. Add an extra egg if needed to help bind.
  7. Form Meatballs: Using a scoop or ¼ cup measuring cup, portion the mixture into about 3-ounce balls. Roll gently between hands, wetting or oiling hands if needed to prevent sticking.
  8. Heat Oil: Pour enough oil into a large non-stick skillet to cover the bottom about ¼ inch. Heat over medium until bubbles form around a wooden spoon inserted into the oil, indicating readiness.
  9. Fry Meatballs: Carefully place the eggplant balls in the hot oil. Brown on multiple sides, handling gently as the mixture is soft. Remove and drain on paper towel-lined plate. Add more oil during cooking if necessary.
  10. Serve: Serve immediately plain or with warmed tomato sauce and a sprinkle of grated Pecorino Romano. Alternatively, simmer meatballs in sauce and serve with pasta. Buon Appetito!

Notes

  • Roasting times vary depending on eggplant size, between 45 to 100 minutes.
  • For easier pulp removal, scoop while eggplant is still warm.
  • Moisture content in pulp requires draining to avoid soggy meatballs.
  • Breadcrumbs and eggs can be adjusted to improve binding if mixture is too wet or crumbly.
  • Meatballs can be made a day ahead after roasting eggplants and stored in refrigerator.
  • To reduce oil absorption, ensure the oil is hot enough before frying.
