Ingredients
Mockarita
- 1/2 cup pineapple juice (100% pineapple juice)
- 1 oz canned full-fat coconut milk (shaken well)
- 1/4 cup coconut water
- 1 lime (juiced)
- 1 pinch sea salt
- Ice (for shaking and serving)
Rim and Garnish
- 2 tablespoons shredded coconut (toasted)
- Honey or corn syrup (for rim adhesive)
- Lime wheel (for garnish)
- Pineapple wedge or pineapple frond (for garnish)
Instructions
- Toast shredded coconut: In a small dry pan over low heat, toast the shredded coconut while stirring constantly for 2 to 3 minutes until golden brown. Transfer to a shallow plate and set aside.
- Prepare the glass rim: Pour honey or corn syrup onto a second shallow plate. Dip the rim of a cocktail glass into the honey, then press the rim into the toasted coconut until fully coated.
- Mix the mockarita: In a cocktail shaker, combine pineapple juice, full-fat coconut milk, coconut water, freshly squeezed lime juice, a pinch of sea salt, and ice. Shake vigorously for 15 to 20 seconds until well chilled and fully mixed.
- Serve: Fill the rimmed glass with fresh ice. Strain the shaken mixture into the glass.
- Garnish and enjoy: Garnish the mockarita with a lime wheel and either a pineapple wedge or pineapple frond. Serve immediately for the best refreshing experience.
Notes
- Use full-fat coconut milk shaken well to ensure a creamy texture.
- Adjust the amount of honey or corn syrup for the rim depending on desired sweetness and stickiness.
- To toast shredded coconut evenly, keep the heat low and stir constantly to avoid burning.
- Feel free to substitute honey with corn syrup for a more neutral flavor or to keep it vegan.
- This mockarita is best served immediately to retain its chilled freshness and crisp flavors.
