- 1½ cups diced fresh pineapple
- 2 tablespoons fresh lime juice (from 1 lime)
- ½ cup finely diced red onion (from 1 small red onion)
- ½ cup seeded and diced English cucumber (from 1 small cucumber)
- 3 tablespoons seeded and minced jalapeño pepper (from 1 to 2 peppers)
- ¼ cup chopped fresh cilantro
- 1 large ripe avocado, cut into small dice (about 1 cup)

Instructions
- Combine Ingredients: In a mixing bowl, add the diced pineapple, fresh lime juice, finely diced red onion, seeded and diced English cucumber, minced jalapeño peppers, sugar, vegetable oil, salt, and chopped cilantro. Toss all the ingredients together until they are evenly combined.
- Refrigerate: Cover the bowl and refrigerate the salsa for up to a few hours to allow flavors to meld together and chill the mixture before serving.
- Add Avocado: Right before serving, gently fold in the diced avocado, taking care not to mash it to retain its creamy texture.
- Adjust Seasoning: Taste the salsa and adjust seasoning if needed, adding more salt or lime juice according to your preference.
- Serve: Serve the salsa chilled as a topping, dip, or side.
Notes
- English or hothouse cucumbers have thin, tender skin and do not require peeling. If using regular cucumbers, peel them first to remove the thicker, often waxed skin.
- For less heat, remove all the seeds from the jalapeños; for more spice, leave some seeds in or add more jalapeños.
- Use ripe avocados for the best creamy texture and flavor; avoid overripe to prevent mushiness.
