Ingredients
Marinade and Shrimp
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon tomato paste
- 1-1/2 teaspoons sugar
- 1-1/2 teaspoons celery seed
- 1 garlic clove, minced
- 1/2 teaspoon coarsely ground pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground mustard
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon hot pepper sauce
- 1 pound cooked large shrimp, peeled and deveined
- 1 small onion, thinly sliced and separated into rings
- 2 bay leaves
Instructions
- Prepare the Marinade and Combine Ingredients: In a large resealable plastic bag, combine olive oil, red wine vinegar, tomato paste, sugar, celery seed, minced garlic, coarsely ground pepper, salt, ground mustard, crushed red pepper flakes, and hot pepper sauce. Seal the bag and shake gently to mix the marinade thoroughly.
- Add Shrimp, Onion, and Bay Leaves: Add the peeled and deveined cooked large shrimp, thinly sliced onion rings, and bay leaves to the bag with the marinade. Seal the bag again ensuring all contents are inside.
- Marinate in Refrigerator: Turn the bag gently to coat the shrimp and onion evenly with the marinade. Place the bag inside another container or bowl to catch leaks and refrigerate. Allow the shrimp to marinate for up to 24 hours to absorb the flavors.
- Drain and Serve: When ready to serve, drain the shrimp from the marinade, discarding the liquid and bay leaves. Serve the pickled shrimp chilled as an appetizer or part of a seafood platter.
Notes
- Marinate the shrimp for at least 30 minutes to allow flavors to develop, but no longer than 24 hours to avoid texture changes.
- Store the sealed marinade bag inside a bowl or container to prevent leaks in the refrigerator.
- This recipe uses cooked shrimp; do not cook shrimp in the marinade to retain ideal texture.
- Adjust hot pepper sauce and red pepper flakes to taste for spiciness.
- Serve chilled or at room temperature, garnished with fresh herbs if desired.
