This vibrant Peri Peri Chicken and Rice One Pot dish offers a quick and flavorful meal combining tender chicken breast pieces with aromatic peri peri seasoning, fresh vegetables, and fluffy long grain rice. Cooked entirely in one pan, this recipe delivers a wholesome, spicy dinner perfect for busy weeknights or casual gatherings.
Ingredients
Protein and Seasoning
- 2 tsp Sunflower oil
- 600 g Skinless, boneless Chicken breast, chopped into bite-sized pieces
- 2 tsp Peri peri seasoning
- 2 Garlic cloves, minced
Vegetables
- 1 Red onion, peeled and chopped
- 2 Red peppers, deseeded and chopped
- 200 g Peas, frozen
Grains and Liquids
- 800 ml Hot chicken stock (made from a cube is fine)
- 3 tbsp Tomato purée
- 200 g Long grain rice, rinsed well
Seasoning
- Sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Heat the oil and brown the chicken: Heat 2 teaspoons of sunflower oil in a large sauté pan over medium heat. Add the chopped chicken breast pieces and cook for about 5 minutes, turning occasionally, until they start to brown evenly on all sides.
- Cook the aromatics and seasoning: Add 2 teaspoons of peri peri seasoning, minced garlic cloves, and chopped red onion to the pan. Fry this mixture for another 3-5 minutes, stirring occasionally, until the onion softens and the spices release their aroma.
- Add vegetables, stock, tomato purée, and rice: Stir in the chopped red peppers, 800 ml of hot chicken stock, 3 tablespoons of tomato purée, and the rinsed long grain rice. Season generously with sea salt and freshly ground black pepper. Cover the pan with a lid and reduce the heat to low to gently simmer.
- Simmer until rice is nearly cooked: Cook covered for 15 minutes, allowing the rice to absorb most of the stock and become tender.
- Add peas and finish cooking: When the rice is nearly cooked and most of the liquid is absorbed, add the frozen peas. Replace the lid and continue cooking on low heat for an additional 5 minutes, until the peas are heated through and the dish is cooked fully.
Notes
- Rinsing the rice before cooking helps remove excess starch and prevents it from becoming sticky.
- If you prefer extra heat, increase the amount of peri peri seasoning or add some fresh chili.
- Use chicken stock made from a cube or homemade stock for convenience and enhanced flavor.
- This dish can be easily doubled to feed a larger group, just use a bigger pan and adjust cooking time accordingly.
- Ensure the pan is covered during cooking to trap steam and cook the rice evenly.
