Ingredients
Vegetable Topping
- 3 tablespoons extra virgin olive oil
- 2-3 bell peppers, sliced
- 1 cup cherry tomatoes
- 2 cloves garlic, smashed
- 1 tablespoon fresh oregano leaves
- 1 tablespoon balsamic vinegar
- 1 pinch crushed red pepper flakes
- 1 pinch kosher salt
Pizza Base and Cheese
- 1/2 pound pizza dough, homemade or store-bought
- 1 cup shredded provolone cheese
- 1 cup shredded gruyere cheese
- 1 large handful fresh basil, plus more for topping
Instructions
- Preheat oven and prepare baking sheet: Preheat your oven to 450 degrees Fahrenheit. Lightly grease a large baking sheet with olive oil to prevent sticking.
- Sauté vegetables: Heat a medium skillet over medium heat. Add the 3 tablespoons of olive oil, sliced bell peppers, cherry tomatoes, smashed garlic cloves, fresh oregano leaves, balsamic vinegar, and a pinch of crushed red pepper flakes and kosher salt. Cook for about 10-15 minutes until the peppers begin to soften and garlic becomes fragrant. Remove from heat and set aside.
- Roll out dough: On a lightly floured surface, roll or push the pizza dough into a thin circle about 10-12 inches in diameter. Transfer the dough carefully onto the prepared baking sheet.
- Assemble pizza: Drain any excess olive oil left from the sautéed vegetables over the dough and spread it evenly. Sprinkle the shredded provolone cheese over the dough first. Arrange the sautéed peppers and cherry tomatoes evenly on top of the provolone. Next, sprinkle the shredded gruyere cheese and scatter fresh basil leaves over the pizza.
- Bake the pizza: Place the baking sheet in the preheated oven and bake for 10-15 minutes, until the crust turns golden brown and the cheese is melted and bubbly.
- Garnish and serve: Remove the pizza from the oven, top with more fresh basil for a burst of herbaceous flavor, slice, and enjoy while warm!
Notes
- You can substitute the bell peppers with other colorful peppers for variety.
- Be sure to roll the dough thinly to achieve a crispy crust.
- Fresh basil added after baking enhances the flavor without wilting.
- Adjust red pepper flakes to your preferred level of heat.
- If you prefer, use part-skim cheese for a lighter version.
