Description

Delicious and healthy Peanut Butter Protein Balls made with sugar-free peanut butter powder, vanilla protein powder, and applesauce. These no-bake energy bites are coated in rich dark chocolate, making them a perfect high-protein snack for any time of the day.

Ingredients

Main Ingredients

  • 1 1/2 cups sugar-free peanut butter powder + 2 tbsp
  • 2 (30g) scoops vanilla protein powder
  • 2/3 cup unsweetened applesauce
  • 1 tsp sea salt

For Coating

  • Melted dark chocolate chips
  • Pinch of sea salt (for finishing)

Instructions

  1. Combine Dry Ingredients: In a large bowl, thoroughly stir together the sugar-free peanut butter powder and vanilla protein powder, ensuring they are well mixed.
  2. Add Wet Ingredients: Mix in the unsweetened applesauce gradually until the mixture forms a thick, rollable dough that holds together well.
  3. Shape the Balls: Roll the dough into bite-sized balls, approximately 1 inch in diameter, and place them on a tray or plate. Chill them in the refrigerator for at least 15-20 minutes so they firm up enough for coating.
  4. Melt Chocolate: While the balls chill, melt the dark chocolate chips using a double boiler or microwave in short bursts, stirring frequently until smooth and glossy.
  5. Coat the Balls: Dip each chilled protein ball into the melted dark chocolate to coat completely. Lay them back on parchment paper or a non-stick surface and immediately sprinkle with a pinch of sea salt for enhanced flavor.
  6. Set the Chocolate: Place the coated balls back in the refrigerator and chill until the chocolate is fully set, approximately 30 minutes.
  7. Store and Serve: Store the peanut butter protein balls in an airtight container in the fridge for up to one week or freeze them for longer storage. Enjoy chilled as a nutritious snack!

Notes

  • Use sugar-free peanut butter powder to reduce calories and sugar content.
  • If you prefer a sweeter taste, add a natural sweetener like stevia or monk fruit powder to the dough.
  • For a nut-free version, substitute peanut butter powder with sunflower seed butter powder.
  • Ensure the applesauce is unsweetened to control sugar levels in the recipe.
  • Use high-quality dark chocolate (70% cocoa or higher) for coating for better flavor and antioxidants.
  • Chilling times are important to help the balls hold their shape and set the chocolate coating properly.
