- 1 ¼ cups glutinous rice flour
- ¼ cup sugar
- 1 cup water

- Prepare the Filling: In a bowl, combine the peanut butter and sweetened condensed milk. Mix until smooth. Refrigerate the mixture for 15 minutes to firm it up, making it easier to shape into balls.
- Make the Dough: In a nonstick pan, whisk together the glutinous rice flour, sugar, and water until smooth. Place the pan over medium heat and constantly stir the mixture with a rubber spatula until it thickens into a dough-like consistency, about 5-7 minutes. Remove from heat and let the dough cool for 10 minutes.
- Shape the Dough: Dust your work surface generously with cornstarch. Place the cooled dough onto the surface and dust it with more cornstarch to prevent sticking. Roll the dough into a 1/4-inch thick rectangle, then dust off any excess cornstarch. Cut the dough into 8 equal pieces.
- Assemble the Mochi: With your hands, scoop a tablespoon of the chilled peanut butter filling and form it into a ball. Place the filling in the center of a piece of dough. Carefully pull the sides of the dough over the filling and pinch to seal completely. Use a dough scraper to trim any excess dough. Place the sealed mochi seam-side down on cornstarch. Repeat for all pieces.
