Description

This Peanut Butter Banana Date Bark is a delicious and healthy sweet snack combining the natural sweetness of bananas and dates with creamy peanut butter, crunchy granola, and rich dark chocolate. It’s easy to prepare and perfect for a guilt-free treat that satisfies your sweet tooth.

Ingredients

Fruits

  • 3 bananas, sliced into quarters
  • 20 dates, pitted and sliced open

Spread and Toppings

  • 1/3 cup creamy peanut butter
  • 1/2 cup granola of choice
  • Sea salt, for sprinkling on top

Chocolate

  • 1 cup dark chocolate chips
  • Optional: coconut oil (to aid melting)

Instructions

  1. Prepare the fruits: Slice the bananas into quarter-sized pieces and slice the dates open, ensuring the pits are removed.
  2. Arrange on baking sheet: Line a baking sheet with parchment paper and evenly arrange the banana quarters and prepared dates across the sheet.
  3. Spread peanut butter: Dollop the creamy peanut butter across the arranged bananas and dates, then spread it evenly with a spatula to cover them.
  4. Add granola: Sprinkle the granola evenly over the peanut butter layer for an added crunch.
  5. Melt chocolate: Place the dark chocolate chips (and coconut oil if using) into a microwave-safe bowl and heat in 30-second increments, stirring in between, until fully melted and smooth.
  6. Pour chocolate: Drizzle or pour the melted chocolate evenly over the peanut butter, banana, date, and granola mixture on the baking sheet. Optionally sprinkle a pinch of sea salt on top.
  7. Set the bark: Place the baking sheet in the freezer or fridge for 30 to 60 minutes to allow the bark to harden and set.
  8. Serve: Once set, break the bark into about 10 pieces and enjoy your delightful Peanut Butter Banana Date Bark.

Notes

  • Store any leftover bark in the freezer for up to 2 months to maintain freshness and texture.
  • Using ripe but firm bananas prevents mushiness and improves texture.
  • If preferred, coconut oil can be added to the chocolate to create a smoother drizzle and easier melting process.
