Description

Delicious and easy Peach Cobbler Egg Rolls featuring sweet, cinnamon-spiced peach filling wrapped in crispy fried egg roll wrappers. These delightful treats are perfect for dessert or a special snack, topped with cinnamon sugar and optionally served with vanilla ice cream and caramel syrup.

Ingredients

Peach Cobbler Filling

  • 1 lb Peaches (frozen, sliced or diced)
  • 1/3 cup Sugar (or sugar substitute)
  • 1/4 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1/4 cup Butter (salted)
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cornstarch (mixed with a few drops of oil to prevent clumping, or Xanthan Gum)

Egg Rolls

  • 10 Egg Roll Wrappers (10-12 per pack)
  • Oil for frying (enough for frying at 350°F)

Topping

  • 1/4 cup Sugar (or sugar substitute)
  • 1 tsp Ground Cinnamon

Optional Serving

  • Caramel Syrup
  • Vanilla Ice Cream

Instructions

  1. Prepare the Filling: Add the frozen peaches, sugar, ground cinnamon, ground nutmeg, salted butter, vanilla extract, and cornstarch mixture to a pot. Stir all ingredients to combine evenly.
  2. Cook the Filling: Cook the mixture over medium-low heat for about 10 minutes, stirring occasionally until the peaches are thawed and the mixture forms a light, syrupy consistency.
  3. Assemble Egg Rolls: Place an egg roll wrapper flat on a clean surface. Spoon 2-3 slices of the peach filling along with some syrup into the center of the wrapper.
  4. Fold and Seal: Fold the egg roll wrapper around the filling, sealing the edges with a few drops of water to ensure they hold together during frying. Repeat the process for all wrappers and filling.
  5. Heat Oil for Frying: Heat oil in a frying pan or deep skillet to 350°F (175°C) to get the oil hot enough for frying the egg rolls properly.
  6. Fry the Egg Rolls: Carefully place the egg rolls into the hot oil in batches, frying until they turn golden brown, about 3-4 minutes total. If shallow frying, turn the egg rolls halfway through to brown both sides evenly.
  7. Drain and Cool: Remove the fried egg rolls from the oil using a slotted spoon and drain them on a cooling rack or a plate lined with paper towels to remove excess oil.
  8. Add Cinnamon Sugar: While the egg rolls are still warm, sprinkle the mixture of sugar and ground cinnamon over the top to add a sweet and spicy finish.
  9. Serve: Optionally, serve the peach cobbler egg rolls with vanilla ice cream scoops and drizzled caramel syrup for an indulgent dessert experience.

Notes

  • Ensure the oil reaches 350°F before frying to achieve a crispy, golden finish.
  • Do not overfill the egg rolls as it may cause them to burst during frying.
  • Use a few drops of water to effectively seal the egg roll edges.
  • Serve immediately for best texture, as egg rolls tend to lose crispiness when cooled.
  • Substitute sugar with your preferred sugar substitute to make the recipe diabetic-friendly.
  • Xanthan gum can be used as a gluten-free alternative to cornstarch as a thickening agent.
