Description

A quick and flavorful recipe for Parmesan Roasted Asparagus with cherry tomatoes, garlic, fresh basil, and a tangy balsamic reduction. This vibrant side dish blends tender roasted asparagus with juicy tomatoes, savory parmesan, and aromatic herbs, perfect for a healthy and elegant accompaniment to any meal.

Ingredients

Vegetables

  • 1 bunch asparagus, trimmed
  • 1 pint cherry tomatoes, halved (or quartered depending on their size)
  • 2-3 garlic cloves, minced
  • 7 large basil leaves, sliced thin

Dairy

  • ½ cup shaved parmesan

Oils & Seasonings

  • 1 Tbsp olive oil
  • 1 tsp olive oil (for tomatoes)
  • ¼ tsp salt (for asparagus)
  • ¼ tsp black pepper (for asparagus)
  • Salt and black pepper, to taste (for tomatoes)

Condiments

  • Balsamic reduction (store bought or homemade)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Tomato Mixture: In a bowl, toss the halved cherry tomatoes, minced garlic, and 1 teaspoon of olive oil together. Season with salt and pepper according to your taste, then set aside to marinate flavors.
  3. Prepare Asparagus: Snap off the woody ends of the asparagus and place the spears in a large bowl. Toss them with ¼ teaspoon salt, ¼ teaspoon black pepper, and 1 tablespoon of olive oil until evenly coated.
  4. Assemble on Baking Sheet: Arrange the seasoned asparagus in a single horizontal line on the prepared baking sheet. Evenly sprinkle the shaved parmesan cheese over the asparagus, then spoon the tomato and garlic mixture evenly on top.
  5. Roast Vegetables: Place the baking sheet in the preheated oven and roast for 12-15 minutes or until the asparagus is tender and the tomatoes are soft and slightly blistered.
  6. Garnish and Serve: Remove from oven and immediately sprinkle sliced basil leaves over the roasted tomatoes. Drizzle the entire dish with balsamic reduction or serve with individual drizzles on each plate. Serve warm for best flavor.

Notes

  • You can adjust the roasting time depending on how tender you prefer your asparagus.
  • Balsamic reduction can be store-bought or homemade by simmering balsamic vinegar until thick and syrupy.
  • This recipe pairs well with grilled chicken, fish, or as a vegetarian side dish.
  • Use fresh, high-quality parmesan and basil for the best flavor.
