Acorn Squash
- 2 acorn squash (small to medium sized)
Seasoning & Coating
- ¼ cup extra-virgin olive oil
- 1 cup finely grated parmesan cheese
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon dried basil
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
Instructions
- Slice acorn squash: Preheat the oven to 425°F (220°C). Trim the top and bottom ends of each acorn squash so it can stand flat. Place it upright and carefully slice each squash in half from top to bottom. Scoop out the seeds and stringy pulp from each half with a spoon. Then slice each half into roughly 1-inch thick slices.
- Toss with seasoning: In a large mixing bowl, combine the sliced acorn squash, extra-virgin olive oil, finely grated parmesan cheese, garlic powder, kosher salt, dried basil, dried thyme, and dried oregano. Using your hands or a spatula, toss thoroughly until each slice is evenly coated with the parmesan herb mixture.
- Bake: Arrange the coated squash slices in a single layer on a parchment-lined baking tray. If there is any remaining parmesan herb mixture in the bowl, press it gently onto the tops of the slices. Bake in the preheated oven for 20 to 25 minutes until the squash is tender and the tops are lightly golden brown.
- Serve: Remove the roasted acorn squash from the oven and transfer to a serving platter. Serve warm as a flavorful side dish.
