Ingredients

Turnips

  • 12 small to medium turnips, peeled
  • Salt, to taste (for boiling water and seasoning)

Garlic Olive Oil Mixture

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Freshly ground black pepper, to taste

Toppings

  • 1 cup freshly grated Parmesan cheese (or as needed to cover turnips)
  • Chopped fresh chives, for garnish


Instructions

  1. Boil the Turnips: Place the peeled turnips in a pot and cover them with salted water. Bring the water to a boil and cook the turnips for 20 to 30 minutes or until they can be easily pierced with a paring knife. Drain the turnips and let them cool slightly.
  2. Preheat the Oven: Set the oven temperature to 375°F (190°C) to prepare for baking the turnips.
  3. Crush the Turnips: Lay the cooked turnips on a clean kitchen towel or a double layer of paper towels. Gently press each turnip down until it is about 1/2-inch in height. Let them sit for 15 minutes to drain, then carefully flip them over onto a dry area of the towel or fresh paper towels to let the other side drain and dry.
  4. Prepare Garlic Olive Oil Mixture: In a small bowl, combine the minced garlic, olive oil, salt, and freshly ground black pepper to taste.
  5. Assemble for Baking: Line a baking sheet with parchment paper or nonstick aluminum foil. Place the flattened turnips on the lined sheet. Using a brush, evenly coat each turnip with the garlic olive oil mixture. Sprinkle a generous amount of freshly grated Parmesan cheese over each turnip, gently pressing it down to adhere.
  6. Flip and Repeat: Carefully and quickly flip each turnip over to the other side. Repeat the brushing of olive oil and garlic mixture and sprinkle Parmesan cheese as before on this side.
  7. Bake the Turnips: Bake the turnips in the preheated oven for 20 to 25 minutes. Then flip each turnip again and bake for an additional 15 minutes until the Parmesan crust is golden and crispy.
  8. Garnish and Serve: Remove the turnips from the oven and garnish with chopped fresh chives. Serve warm as a delicious side dish.
