Description

This Parmesan Crusted Chicken recipe combines tender, juicy chicken breasts with a flavorful parmesan and breadcrumb crust, paired with roasted garlic potatoes and sautéed green beans. Cooked entirely in the oven, this dish delivers a crispy, savory meal perfect for a comforting family dinner.

Ingredients

Chicken

  • 1½ lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain; can add 1 tsp Italian seasoning to plain breadcrumbs)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quartered if small, cut into 6ths or 8ths if larger)
  • 1 – 2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to ensure it’s hot and ready for roasting the vegetables and baking the chicken.
  2. Prepare Potatoes: Line a sheet pan with parchment paper or spray with cooking oil for easy cleanup. In a medium bowl, toss red potatoes with minced garlic, olive oil, grated parmesan, salt, and pepper until evenly coated. Spread the potatoes on one-third of the pan and roast in the oven for 10-15 minutes, depending on your preference for browning.
  3. Coat Chicken: While the potatoes roast, toss the chicken breasts in the same bowl with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt making sure each piece is well coated.
  4. Add Chicken and Green Beans: Remove the pan with potatoes from the oven and place the coated chicken breasts on the empty sections of the sheet pan. Meanwhile, toss the green beans with olive oil, minced garlic, parmesan (optional), salt, and pepper. Add the green beans to the pan alongside the chicken and potatoes.
  5. Bake Everything Together: Return the sheet pan to the oven and bake for about 25 minutes, or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes, switch the oven to broil on high for an additional 4-5 minutes if desired.
  6. Rest and Serve: Remove the pan from the oven and allow the chicken and vegetables to cool for several minutes before serving. This rest time helps juices redistribute in the chicken and allows flavors to meld.

Notes

  • You can substitute Italian-seasoned breadcrumbs or add Italian seasoning to plain breadcrumbs for enhanced flavor.
  • Ensure chicken is at least 1 inch thick for even cooking.
  • Broiling at the end helps achieve extra crispy potatoes but watch closely to prevent burning.
  • Parmesan on green beans is optional and can be skipped for a lighter side.
  • Use a meat thermometer to check chicken doneness for safety and best texture.
