Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a delicious and easy one-pan meal featuring tender chicken breasts coated in a cheesy parmesan crust, roasted red potatoes, and fresh green beans. Perfectly balanced and ready in about an hour, it is a flavorful and convenient dinner option that combines crispy textures with savory seasonings.

Ingredients

Chicken

  • lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain; if plain, can add 1 tsp Italian seasoning)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite sized pieces (quartered if small; cut into 6ths or 8ths if larger)
  • 1-2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the potatoes and chicken.
  2. Prepare Potatoes: Line a sheet pan with parchment paper or spray with cooking oil. In a medium bowl, toss the red potatoes with garlic, olive oil, parmesan, salt, and pepper until evenly coated. Spread the potatoes on one-third of the sheet pan in a single layer. Place in the oven and roast for 10-15 minutes, depending on your preferred crispness.
  3. Prepare Chicken: While the potatoes roast, in the same mixing bowl, combine chicken breasts with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and sea salt. Toss to fully coat each piece. After the initial potato roasting time, remove the pan and place the chicken on another section of the pan.
  4. Prepare Green Beans: In the same bowl, toss trimmed green beans with olive oil, garlic, optional parmesan, salt, and pepper. Add the green beans to the remaining space on the sheet pan.
  5. Bake Everything: Return the full sheet pan to the oven and bake for approximately 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  6. Broil for Crispiness (Optional): For extra crispy potatoes, switch the oven to broil on high for 4-5 minutes after baking. Watch closely to prevent burning.
  7. Rest and Serve: Remove the sheet pan from the oven and let the chicken rest for several minutes before serving. Enjoy your complete Parmesan Crusted Chicken Sheet Pan Dinner!

Notes

  • You can substitute Italian breadcrumbs with panko for extra crunch.
  • Adjust the quantity of garlic according to your taste preference.
  • Make sure the chicken pieces are approximately the same size for even cooking.
  • Using parchment paper helps with easy cleanup and prevents sticking.
  • Watch the broiling step carefully to avoid burning the potatoes.
