Ingredients
Beef Mixture
- 1 pound ground beef
- 1 tablespoon grated onion
- 1 tablespoon plain Greek yogurt
- 1 tablespoon olive oil
- 1 1/2 teaspoons dried oregano
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 3/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried parsley flakes
Assembly
- 4 flatbreads or pitas
- 3 cups shredded lettuce
- 1 cup cherry or grape tomatoes, halved
- 1 small red onion, thinly sliced
- Refrigerated tzatziki sauce, for serving
Instructions
- Make the beef mixture: In a large bowl, combine ground beef, grated onion, Greek yogurt, olive oil, dried oregano, minced garlic, salt, ground cumin, ground coriander, black pepper, paprika, and dried parsley flakes. Mix thoroughly to evenly distribute the spices and ingredients.
- Preheat the oven: Set your oven to 400°F (204°C) to get it ready for baking the beef gyros.
- Flatten the beef: Divide the beef mixture into two equal portions. Place one portion in the center of a 16×12-inch piece of parchment paper, cover with another piece of parchment, and use your hands or a rolling pin to spread it into a thin rectangle matching the paper’s size. Starting from one short end, fold the parchment over the meat and roll it tightly into a 1 1/2-inch diameter log. Repeat for the second portion.
- Cook the beef: Place the wrapped beef logs on a rimmed baking sheet (15x10x1 inches). Bake in the preheated oven for 15 minutes. Remove and drain off any excess grease. Carefully unroll the parchment, break the meat into smaller pieces, and spread them on the baking sheet. Broil for 2 to 3 minutes until the edges become crispy and browned.
- Assemble the gyros: Warm the flatbreads or pitas, then fill each with the crispy gyro meat, shredded lettuce, halved tomatoes, sliced red onion, and a generous dollop of tzatziki sauce. Serve immediately for a delicious Mediterranean-inspired meal.
Notes
- Using parchment paper helps the meat cook evenly and keeps cleanup simple.
- You can substitute ground lamb or a mix of beef and lamb for authentic gyro flavor.
- For extra crispiness, broil the meat carefully and watch to avoid burning.
- Warm the pitas or flatbreads before assembling to enhance softness and flavor.
- Tzatziki sauce can be homemade or store-bought, depending on your preference.
