Ingredients

Gnocchi and Cooking

  • 3 Tbsp olive oil
  • 1 (16 oz) pkg shelf stable gnocchi
  • Salt and black pepper, to taste
  • 2 tsp minced garlic

Finishing Ingredients

  • 1/4 cup finely shredded parmesan cheese
  • 3 Tbsp minced parsley
  • 1 tsp lemon zest
  • Lemon wedges, for serving


Instructions

  1. Heat the oil: Heat olive oil in a 12-inch non-stick skillet over medium-high heat until shimmering to prepare for frying.
  2. Cook the gnocchi: Add the gnocchi to the hot oil, season with salt and black pepper. Cook, tossing occasionally, for about 5 minutes until the gnocchi are golden brown in spots and tender on the inside.
  3. Add garlic: Add the minced garlic to the skillet, toss with gnocchi, and cook just briefly until fragrant, about 30 seconds. Remove from heat immediately to prevent burning the garlic.
  4. Finish with cheese and herbs: Transfer the gnocchi to a serving dish. Toss with finely shredded parmesan cheese, minced parsley, and lemon zest to evenly coat and add fresh flavor.
  5. Serve: Serve immediately with lemon wedges on the side for spritzing to add a bright, citrusy finish to the dish.
