Ingredients

Spinach Mixture

  • 1/3 cup unsalted butter, divided
  • 1 small shallot, minced
  • 1 garlic clove, minced
  • 2 cups fresh spinach, chopped
  • 2 tablespoon Vermouth
  • 1/4 cup grated Parmesan cheese
  • 2 slices cooked and crumbled bacon (optional)

Topping

  • 1/2 cup Panko breadcrumbs

Oysters

  • 24 raw oysters, shucked
  • 4 lemon wedges, for serving


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it is hot and ready for baking the oysters once they’re assembled.
  2. Sauté Aromatics: Heat a large skillet over medium heat and melt 1/4 cup of butter. Add the minced shallots and sauté for 3-4 minutes, stirring frequently until softened. Add the garlic and continue to sauté for an additional minute to release its fragrance.
  3. Add Spinach and Vermouth: Add the chopped spinach and Vermouth to the skillet. Cook for about 2 minutes until the spinach wilts and the liquid slightly reduces. Stir in the grated Parmesan cheese and crumbled bacon if using, combining all ingredients well.
  4. Prepare Breadcrumb Butter: Melt the remaining 1/12 cup butter and mix it with the panko breadcrumbs to create a buttery topping that will crisp up nicely when baked.
  5. Assemble the Oysters: Arrange the shucked oysters on a baking sheet or dish. Spoon an even amount of the spinach mixture onto each oyster, then sprinkle the buttered breadcrumbs evenly over the top.
  6. Bake: Place the assembled oysters in the preheated oven and bake for 8-10 minutes, or until the breadcrumbs are golden brown and the spinach mixture is heated through.
  7. Serve: Serve the oysters immediately with lemon wedges on the side for a fresh, bright contrast.
