Ingredients

Oysters

  • 24 medium oysters (live in shell)

Topping

  • 1/2 tablespoon extra virgin olive oil
  • 2 shallots (finely minced)
  • 9 ounces fresh baby spinach
  • 2 ounces 1/3 less fat cream cheese (Philadelphia preferred)
  • 3 tablespoons half & half cream
  • 3 tablespoons grated Pecorino Romano cheese
  • 1/4 cup plain or gluten-free panko crumbs


Instructions

  1. Prepare Oysters: If shucking them yourself, rinse and clean the oysters thoroughly. With gloved hands and over a dish towel for safety, carefully open the oysters using an oyster knife by cutting under the oyster to release it from the shell.
  2. Arrange Oysters: Discard the top shell of each oyster and place the opened oysters on one or two sheet pans, depending on size. Refrigerate until needed to keep them fresh.
  3. Make the Topping – Sauté Shallots: Heat 1/2 tablespoon olive oil in a large skillet over medium heat. Add the finely minced shallots and cook until tender, about 3 to 4 minutes.
  4. Add Spinach: Add the fresh baby spinach to the skillet, season lightly with salt and pepper, and stir until the spinach wilts down, approximately 2 minutes.
  5. Create Creamed Spinach Mixture: Incorporate the cream cheese, half & half cream, and grated Pecorino Romano cheese into the skillet. Stir continuously until the cream cheese melts fully and the mixture has a smooth, creamy texture. Remove from heat and refrigerate until completely cool, or freeze for 10 minutes to speed cooling.
  6. Preheat Broiler: When ready to prepare the oysters for serving, preheat the oven to broil on high with the rack positioned about 6 inches from the heating element.
  7. Top Oysters: Place about one tablespoon of the cooled spinach mixture on top of each oyster. Sprinkle each with 1/2 teaspoon of plain or gluten-free panko breadcrumbs for a crunchy topping.
  8. Broil: Broil the oysters for 5 to 7 minutes or until the topping turns golden brown and crispy. Watch carefully to prevent burning.
  9. Serve: Serve the Oysters Rockefeller immediately while hot and enjoy the perfect balance of creamy, savory, and crunchy textures.
