Pumpkin Spice Mix-In
- 1/3 cup pumpkin
- 1/4 tsp cinnamon

- 1/8 tsp vanilla extract
- 1 Tbsp dried cranberries (for topping)
- 1 Tbsp raw unsalted pumpkin seeds (for topping)
Chocolate Banana Mix-In
- 2 – 3 tsp cocoa powder (to taste)
- 1 Tbsp creamy peanut butter (optional)
- 1/2 well ripened banana (mashed)
- 1/4 tsp vanilla extract
- 1/2 Tbsp mini chocolate chips (for topping, optional)
- 1 Tbsp shredded toasted coconut (for topping, optional)
Berry Almond Mix-In
- 1/2 cup fresh berries such as strawberries, blueberries or raspberries (chopped strawberries)
- 1/4 tsp vanilla extract
- 1 1/2 tsp chia seeds
- 1 small ripe banana (mashed)
- 1 Tbsp creamy almond butter
- 1 Tbsp ground flax seeds
- 3 drops almond extract (pour into lid first)
Apple Cinnamon Mix-In
- 1/2 cup chopped crisp, sweet apples
- 1/4 tsp ground cinnamon
- 1 pinch ground nutmeg
- 1 Tbsp chopped pecans (for topping)
Instructions
- Combine Base Ingredients: Add the rolled oats, unsweetened almond milk, plain fat-free Greek yogurt, a pinch of salt, and honey or maple syrup to a 16 oz. jar or bowl. This forms the creamy oat base for all the variations.
- Add Flavor Mix-In: Stir in the ingredients specific to your chosen flavor variation: pumpkin spice, chocolate banana, berry almond, or apple cinnamon. Do not add any toppings at this stage.
- Mix Well: Thoroughly stir to combine the oats, liquids, and mix-ins evenly ensuring all ingredients are incorporated well.
- Refrigerate Overnight: Cover the jar or bowl and refrigerate it overnight (at least 6-8 hours) to allow the oats to soak and soften while the flavors meld.
- Adjust Consistency and Add Toppings: The next morning, check the consistency; add more almond milk to thin if desired. Then add any toppings listed for your chosen flavor variation for added texture and taste.
