Ingredients
Vegetables & Dairy
- 2 tablespoons salted butter
- 1 onion, diced ½ inch
- 1 pound potatoes, diced ½ inch
- 12 large eggs
- 1 cup heavy whipping cream
- 16 ounces cheddar cheese (about 4 cups shredded), divided
Protein
- 1 pound cubed ham, bite-sized 1 inch
Instructions
- Sauté onions and potatoes: Dice the onion into ½ inch cubes. Turn the Ninja Foodi to High Sear/Sauté mode and add the butter. Once melted, add the onions and cook for about 5 minutes until softened. While the onions sauté, dice the potatoes into ½ inch pieces and add them to the pot with the onions.
- Prepare egg mixture: Crack the 12 eggs into a large mixing bowl. Use an immersion blender or a whisk to blend the eggs until combined and slightly frothy.
- Add ham and cheese: Cube the ham into approximately 1-inch bite-sized pieces. Turn off the Ninja Foodi. Pour the blended eggs and heavy cream into the pot with the sautéed vegetables. Add the cubed ham and 3 cups of shredded cheddar cheese. Stir everything together thoroughly to combine.
- Slow cook the casserole: Place the pressure lid on the Ninja Foodi and turn the seal to vent. Set the Slow Cooker function to low for 8 hours. The slow cooking will allow the flavors to meld and the eggs to gently set.
- Optional broil topping: After cooking, you can serve the casserole as is or top it with the remaining 1 cup of cheddar cheese. Use the broil function for about 5 minutes or until the cheese is golden brown and bubbly, giving it a delicious crust.
- Serve and enjoy: Scoop the casserole onto plates and enjoy a comforting, filling breakfast perfect for feeding a crowd.
Notes
- Do not worry if the casserole cooks longer than 8 hours. The Ninja Foodi will automatically switch to keep warm mode, and even after 12 hours, the casserole remains perfectly cooked.
- You can substitute ham with cooked bacon or breakfast sausage if preferred.
- The recipe can be doubled or halved depending on your serving needs, just adjust cooking time if necessary.
- Use any type of cheese you prefer, but sharp cheddar gives the best flavor.
