Potatoes
- 4 red potatoes, chopped into 1/2″ to 3/4″ chunks
Seasonings & Oil
- 1 tablespoon coconut oil (or olive oil)
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley (or Italian seasoning)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Topping
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven. Set your oven to 400ºF (200ºC) and lightly spray a baking dish or cookie sheet with cooking spray to prevent sticking.
- Prepare the potatoes. Chop the red potatoes into chunks about 1/2 to 3/4 inch in size. Use a paper towel to pat them slightly dry to help them crisp up during baking.
- Season the potatoes. Place the chopped potatoes in a bowl and drizzle with melted coconut oil. Sprinkle garlic powder, dried parsley, salt, and black pepper over the potatoes, then toss to coat evenly.
- Arrange for baking. Spread the seasoned potatoes in a single layer on the prepared baking sheet to ensure even cooking.
- Bake the potatoes. Bake for 25 minutes, stirring once or twice during baking to help them brown evenly. For extra crispy potatoes, place them under the broiler for 2 to 4 minutes—watch closely to prevent burning.
- Add the cheese topping. Sprinkle the shredded mozzarella cheese over the hot potatoes, then return to the oven for 3 to 4 minutes until the cheese is melted and bubbly. Serve warm.
