Ingredients

Potatoes

  • 4 red potatoes, chopped into 1/2″ to 3/4″ chunks

Seasonings & Oil

  • 1 tablespoon coconut oil (or olive oil)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley (or Italian seasoning)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Topping

  • 1 cup shredded mozzarella cheese


Instructions
