Description

This One Pot Wonder Tomato Basil Pasta is a quick and flavorful meal that comes together in just 17 minutes. Combining linguine, fire-roasted diced tomatoes, fresh basil, and a mix of aromatic spices, this recipe requires minimal cleanup while delivering a comforting, slightly spicy pasta dish perfect for weeknight dinners.

Ingredients

Pasta & Vegetables

  • 12 ounces linguine pasta (can use a 16 oz box)
  • 1 can (15 ounces) diced tomatoes with liquid (fire roasted recommended)
  • 1 large sweet onion, sliced thinly
  • 2 large sprigs fresh basil, chopped
  • 1 tablespoon minced garlic

Seasonings & Liquids

  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 teaspoons dried oregano leaves
  • 4 cups vegetable broth
  • 2 tablespoons extra virgin olive oil

Garnish

  • Parmesan cheese, for garnish

Instructions

  1. Combine ingredients in pot: In a large stock pot, add linguine pasta, diced tomatoes with their liquid, thinly sliced onion, minced garlic, and chopped basil. Pour in the vegetable broth. Sprinkle the red pepper flakes and dried oregano evenly over the top. Drizzle with extra virgin olive oil.
  2. Cook pasta: Cover the pot and bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low for a gentle simmer. Keep the pot covered and cook for about 10 minutes, stirring every 2 minutes to prevent sticking and ensure even cooking. Continue until the liquid nearly evaporates, leaving about half an inch of broth at the bottom, or reduce more if preferred.
  3. Season and serve: Taste the pasta and season with salt and freshly ground pepper as desired. Stir several times to evenly distribute the remaining liquid. Serve the pasta hot, garnished generously with grated Parmesan cheese to add a rich, savory finish.

Notes

  • You can use a full 16-ounce box of linguine without affecting the dish’s texture.
  • Fire-roasted diced tomatoes add a subtle smoky flavor and a bit of heat, but regular diced tomatoes can be used for a milder taste.
  • Adjust the amount of red pepper flakes according to your heat preference.
  • Stirring frequently is key to preventing the pasta from sticking to the pot and ensuring even cooking.
  • Leftover pasta can be stored in the refrigerator for up to 3 days and reheated with a splash of vegetable broth to maintain moisture.
