Description
A quick and easy one-pot pasta recipe featuring spaghetti cooked with cherry tomatoes, fresh basil, and parmesan cheese. Perfect for a flavorful weeknight dinner that requires minimal cleanup.
Ingredients
Pasta and Vegetables
- 12 ounces spaghetti (or other pasta)
- 8 ounces cherry tomatoes, sliced in half
- 1 diced onion (about 1 1/2 cups)
- 4 cloves garlic, thinly sliced
- 1/4 cup fresh chopped basil (plus extra for garnish)
Liquids and Seasonings
- 4 1/2 cups water
- Salt and pepper to taste
Cheese
- 1/2 cup parmesan cheese
Instructions
- Combine Ingredients: In a large pot, add the spaghetti (breaking in half if needed for more room), cherry tomatoes, diced onion, garlic slices, chopped basil, salt, and pepper. Pour in 4 1/2 cups of water to cover the ingredients.
- Bring to Boil and Cook Pasta: Place the pot over medium-high heat and bring the mixture to a boil. Stir frequently to prevent pasta from sticking and to help the ingredients cook evenly.
- Finish and Serve: Once the pasta is cooked and the water has mostly evaporated or been absorbed, remove the pot from heat. Let it cool for about 5 minutes. Stir in the parmesan cheese until melted and evenly distributed. Garnish with extra fresh basil if desired. Serve warm and enjoy your meal.
Notes
- Snap the spaghetti in half if your pot isn’t large enough to accommodate long noodles.
- Stir frequently during cooking to prevent the pasta from sticking to the bottom of the pot.
- You can substitute parmesan with Pecorino Romano for a sharper flavor.
- Add a pinch of red pepper flakes for a mild spicy kick.
- This recipe can be adapted with gluten-free or whole wheat pasta for dietary preferences.
