  • 1 32 oz container beef bone broth (or beef broth)

  • 1 tsp onion powder
  • 1 tsp Italian seasoning

  • 1/2 tsp salt
  • 1/4 tsp black pepper

Dairy & Pasta

  • 1 cup 2% cottage cheese
  • 6 lasagna noodles, broken into pieces


Instructions

  1. Sauté aromatics: Heat the olive oil in a large pot over medium heat. Add the finely chopped white onion and minced garlic, cooking for 3 to 4 minutes until they are softened and fragrant.
  2. Brown the beef: Add the lean ground beef to the pot. Cook thoroughly until browned, breaking it up with a spoon as it cooks to ensure even cooking and no large clumps remain.
  3. Add liquids and seasonings: Pour in the marinara sauce, diced tomatoes (with their juice), and beef bone broth. Stir in the onion powder, Italian seasoning, red pepper flakes if using, salt, and black pepper. Cover the pot and let it simmer on low heat for 15 to 60 minutes to develop flavors.
  4. Cook noodles: Break the lasagna noodles into smaller pieces and add them directly into the simmering soup. Continue cooking uncovered for about 30 minutes or until the noodles are tender.
  5. Prepare cottage cheese: While the soup simmers, blend the cottage cheese using a blender or food processor until smooth and creamy to avoid chunky texture in the soup.
